A Burns supper is a celebration of the life and poetry of the poet Robert Burns, author of many Scots poems including “Auld Lang Syne,” The suppers are normally held on or near the poet’s birthday, 25 January, although they may in principle be held at any time of the year.

Sausage Casserole - Serves 4
Preparation time: 30 minutes
Cooking time: 1 hour
Ready in: 1 hour and 30 minutes
Ingredients:
8 medium size sausages (two per person).
I medium sized onion
4 shallots roughly chopped
2 peppers, sliced
2 crushed garlic cloves
1 400g tin of chopped tomatoes
1/2 pint of chicken stock
1 400g tin of lentils
1 table spoon of cider vinegar
